- 2 teaspoons
- Baking Powder
- 1 cup
- Self-rising flour
- 1 cup
- All Purpose flour
Nothing like coconut sweet bread to get you ready for the holidays. Nothing like coconut sweet bread to have with a cup of tea. The Caribbean islands love this holiday classic and you are sure to love this recipe too. Joanne Risto has graciously shared a family favorite. Give it a try and we are sure you will be happy also.
- Preheat oven to 350 degrees.
- Sift your dry ingredients.
- Add your fruits ,sugar and grated coconut,mix well.
- Add allspice, Nutmeg, cinnamon, bitters, or(mix essence, ,vanilla essence. or almond essence) your preference of Essence.
- In another bowl place 2 well beaten eggs and milk and whisk together,add melted butter, blend in well.
- Add liquids to dry ingredients,mix well until all ingredients are fully blended in.
- Then add to a greased loaf pan.
- Bake for 60 to 80 minutes at 350 degrees f or until a tester or skewer comes out clean.
- Ten minutes before finishing time,make a sugar glaze to brush on top.Brush on and place back in the oven for a few minutes to form your crust on top.This gives you one large loaf.
