This is a family favorite side dish to many meals. Always had this kids in the kitchen helping make this. If you don’t like it too spicy cut down on the pepper. Great addition to the family meal plan as all ages like this. Don’t be afraid to try different varieties of pumpkin and find what is your favorite.
- Wash and drain pumpkin
- In a deep pan heat oil on medium heat
- Add garlic and saute for 1 minute. Do not allow garlic to burn.
- Add pumpkin and stir. Reduce heat to low and cover.
- Cook for 10 minutes (on low) add salt and sugar, stir. Cover and continue to stir occasionally.
- You will notice the pumpkin starting to get softer and spring its own natural juices. If its not producing any juices add 1/4 cup water and stir. Continue to simmer for 15 minutes.
- After 30 minutes or so, pumpkin should be soft, Mash with a potato masher or back of spoon. Taste for salt and adjust accordingly.
- If pumpkin has excessive liquid, uncover and cook for another 5-7 minutes.
